You can spend hours making homemade ice cream with a maker or you can do it this easy, quick & delicious way.
Ingredients:
3 cups low fat milk (or try soymilk for a change)
1 cup splenda or stevia (or sugar if you must)
2 scoops plain protein power (I use soy protein powder)
2 tsp vanilla
optional: 1 - 2 raw eggs
Variations: Add fresh peaches, apricots, berries to flavor the ice cream. You can cut up in chunks (to add after blending) or food process and add before blending.
To Make:
Put ingredients in your blender. Freeze liquid in plastic bowl with top overnight or until frozen. Take out of freezer and put in microwave 1 minute or more, until it’s still frozen but you can remove it from plastic container.
Put entire frozen mixture in food processor and process until blended. If a bit icy, simply add a bit milk to make it creamier. Go slowly in adding milk. Serve immediately with no sugar chocolate syrup.
It’s delicious!

Ingredients:
2 boxes whole mushrooms washed
food process to fine - brocolli, carrots, celery
1 large onion - diced
2 cloves garlic - diced
2 -3 lbs boneless skinless chicken thighs
4 chicken buillon
2 - 3 TBS olive oil
2 mushroom soups
1 can (16 ox) lite coconut milk (I get at Trader Joe’s)
salt
pepper
italian seasonings
cayenne
2 tablespoons corn starch
Parmesan cheese - ½ cup
red potatoes - cook in micro or boil, cut or dice up, and use to serve over
Recipe:
In 3-1/2 - 5-quart slow cooker place whole mushrooms, processed vegetable mixture, onion, garlic, chicken pieces, chicken buillon, olive oil, mushroom soups, coconut milk, seasonings. Reserve parmesan cheese and cornstarch.
Cover & cook on high for 3 -4 hours. Chicken should be falling apart. Take out chicken & diced up.
When broth is hot, add cornstarch. Take out some broth in a cup or measuring glass, add 2 tablespoons cornstach and return to crock pot. When ready to serve, stir in ½ cup Parmesan. Serve over red potatoes, sprinkle with more parmesan (I also add olive oil and cayenne on top).

Recipe by Mary-Anne Reed
1 pound ground turkey - browned in pan & crumbled up with Chili Powder & Taco Seasoning
1 onion food processed
2 red peppers - chopped
1 bunch cilantro - food processed
2 lbs diced tomatoes
2 cans tomato sauce (16 oz each)
1 1-pound can dark red kidney beans, drained
3 - 4 tablespoons chili powder
2 tablespoons olive oil
3-4 chicken buillon cubes
Italian seasoning
salt pepper
Into Crock Pot put:
Add browned ground turkey, food processed onion, cilantro, chopped red peppers, cans of diced tomatoes, cans of tomato sauces, can red kidney beans, olive oil, chicken buillon, chili powder, Italian seasoning, salt, pepper. (I add extra chili powder and like to see a darker mix.)
Cook 3 - 4 hours on HIGH.
Add 2 tablespoons corn starch in warm water to create more gravy if too watery. (By only using 1 can tomato sauce you may cut back on that but I like it tomato-y.)
Serve in big bowls with grated monterey jack or pepper jack cheese and diced onions.
